Assigning your MIDI Controller to Native Instruments plugins woud be a specific topic - but in Logic you can use the Monitor object in the Environment window to see what MIDI message a control (knob, fader, button) sends to Logic and then use the Inspector options to have this message alter the input of any Environment created fader, button etc.
The Logic TNT1 & 2 & 3 tutorials will give you all you need to be able to do this.
Also, Logic features a "Controller Assignments" window. This makes it easy to assign/map a physical control on your Controller to one of Logic's plugin parameters.
Let's say you want to assign the first knob on your MIDI Controller to the Tape Delay's "Wet" slider on one of your tracks...
1. Open the Tape Delay plugin.
2. Open the Controller Assignments window:
Logic Pro > Preferences > Control Surfaces > Controller Assignments (CMD-K)
3. In the Tape Delay, click on and/or move the "Wet" slider.
4. Click on the "Learn mode" button in the Controller Assignments window to highlight it. The window should read "TpDly Wet" or something similar.
5. Move the knob/control on your MIDI Controller to it's extremes a few times to make sure Logic has recognized and learned it.
6. Close the Controller Assignments window and move the knob on your MIDI Controller and it should now control the Tape Delay's "Wet" parameter.
